We made a pretty drastic change to the way we (Brian and I, not Josh) eat late last fall, and I thought maybe I would post a little update on how that’s going. We adopted a ketogenic way of eating, although for Brian it’s more of a low carb thing at this point.
So far, we’ve found plenty of healthy and flavorful recipes to keep things interesting. We’ve tested out recipes that were total bombs and found some real winners. One of the big winners is this cheese sauce right here. Next goal: a truly keto shepherd’s pie using cauliflower instead of potatoes. So far most of the recipes I’ve found include root vegetables, which are too high carb for me. Some experimenting will be needed!
Additionally, we’ve both lost weight. One of us has lost more than the other, and that’s all we’ll say about that! In all seriousness, it feels amazing. After several years of misdiagnosis, different pain meds and several rounds of steroids to combat an ongoing back problem, I can honestly say I would have to be at death’s door before I would take any of those medications again. They provided short-term relief but created some longer-term problems, including weight gain. How I wish I had known back then what I know now about nutrition and food connections to inflammation and other processes in the body.
So for now, we’re still trekking along this path and enjoying it very much!
